I thought I found my favorite menu item with the burrito, but that was before I tried the birria torta! Oh my gosh- so good! Huge portion so two meals for me. Definite win for the price!

The saddest two months in the China Spring culinary year are June and July--because that's when this truck is not in China Spring. The Birria Taco Dinner is outrageously good. My wife is gluten and dairy free EXCEPT for their Birria Taco Dinner. Yes, she makes literal dietary exceptions only for them, knowing full well her body will later respond poorly. The rice and beans are actually worth mentioning for their flavor, items that are generally afterthoughts in TexMex. The birria consome is outstanding, the meat tender and flavorful, the taco somehow soft and crisp at the same time. Both the red and green sauces are delicious. I have eaten Waco TexMex for 18 years, and in my view, this is the only truck that rivals La Milpa.

I got the Birria Quesadilla Dinner. This food is SO bland. And no where near authentic birria.There is more cheese than meat. The consommé tastes like nothing. Literally. Definitely not worth 20 bucks.

Chicken tacos are delicious! The seasoning is just perfect on the chicken tacos. But the birria tacos are even better. I always order 2 tacos and order an extra Consome to dip them into.

This is our favorite taco shop since moving from Southern California. Get the al pastor. The red salsa is great. The staff are excellent people.
