I called ahead to ask if they were really 🔥 coal, because at least in the Northeast, coal ovens have, or at least had to be in the past, grandfathered in. But this is TX so, I guess no such restrictions are in place. I was told the undercarriage would be crisp and the large end of the pie wedge would have some char. So, I hoped I had finally found a pizza joint that would cook pizza properly. Alas, to my chagrin, this wasn't the place. I ordered the Traditional Pizza and added sausage, mushrooms and onions for a 12" pie at almost $25. The pie I received had some char on the large end of the wedge and on the undercarriage, but unfortunately it was cold and chewy. There was a little bite to the large end but very little. The small end had way too much flop. There are instructions for reheating but the suggested temp and pan wouldn't have helped. I'm assuming these reheating instructions were meant for leftovers, not for before you start to eat. The only way that might have worked would have been to order the pizza with no cut, put it in my convection toaster oven at 450 not 350 directly on the rack and cut it with my rocker knife. But, if you have to recook it anyway, Zoli's has a bigger pizza, 14", for about the same price. Their ovens are wood-fired, not coal fired, but the finished product would depend on the efficacy of my CTO and proper cooking time. It seems that all of this speculation about cooking take-out after delivery is ridiculous. Get the Take and Bake pizza from Central for $11.99( cheese), $13.99 (sausage) and add your own additional toppings. I will say, the sausage was in big chunks and though cold tasted pretty good. When you watch pizza videos from the pizza capital of the US (New Haven, CT), they put raw Italian sausage on the pizza and the extremely hot coal ovens cook it quickly. But you can get bulk Italian sausage from CM, though 450 might not be hot enough for food safety issues. I also got the Espresso Cheesecaken which was was ok, but not something I couldn't do without. I only got the Diet Pepsi to get a DoorDash promotion and the profit margin on this small serving must have been several hundred %. Overall, I'll try to stick to my previous resolution of not ordering take-out pizza in The Fort.
