Jose and Aidee have worked for more than 10 years in the food industry, proud to be Mexicans, they wanted to share the traditional tacos acorazados, this is how the idea of Blue Corn Tacos arises.
What a great breakfast! The burrito tortilla was fresh, inside was plenty of shredded machaca beef, egg, and diced potatoes. The Horchata was also delicious and not too sweet. There's no cilantro in the Machaca Breakfast Burrito for those of you that dislike it, and I didn't need any salsa because it was perfectly seasoned as prepared.

Every meal is fresh clean and delicious! We love these guys. My all time fav are the fish tacos but the burritos are a close second. And I'm always excited to support a family owned and operated business especially when it tastes infinitely better than the chains.

Don't understand the 5 star ratings. I am a CO native and have tried most mexican restaurants in CO from from Ft. Collins to CO Springs to Grand Junction, with most food trucks in between. I have to ask, do people fear spice and flavor? Ordered the Asada Street Tacos, Carnitas Burrito chimichanga style, Pastor Street Tacos, Churro, Chile Relleno Taco, and Flan. I go all out when I try a place for the first time. Street tacos were a 3. Overcooked unseasoned meat was disappointing, but decent portions in regard to each taco. The provided red and green salsa didn't add anything to the tacos. The Carnitas Burrito had dry unseasoned/not marinated pork and mushy overcooked rice with bland green chili on top with little pork. However, the fry was impressive on the burrito and you could tell the oil used was fresh. I appreciated the chili being separate as to not compromise the perfect crust on the burrito. The Chile Relleno Taco was great, but just a little salt or fresh jalapeño could have elevated it. Churro was tasty but will need to be reheated. I suggest 10-20 seconds in the microwave. Flan was very good, but breaks apart easily which usually means it has been over cooked. Overall I think the restaurant shows promise, but ultimately sacrificed flavor and spice and greatness for general mass appeal.

We love this place! Friendly staff and wondearful food. The burrito bowls are so fresh, and all the meats they have are cooked perfectly. Good prices too!

first time order here and it was very delicious. the blue corn tortillas are so good. im so glad I found a place who have and use blue corn. it is my favorite. the portions were perfect. the green chili was tasty and will order again. the horchata was very good. you could taste the cinnamon throughout the last drop. everything tasted very fresh. I will recommend this place every time.
