This is what filled my large soup bowl, potatos, carrots, calabasa, chayote, cabbage, red peppers, zucchini and onions. Half of the container was tripe. and I know the recipe was authentic because on top in the center is an entire hoof and ankle joint. I love cartilagenous meats, and this was perfect. The tripe was tender and not chewy, and each veggie tasted like it was added to the pot at the perfect time to bring out its best flavor. The broth was rich and savory, warm but not spicy hot.
