As a suggestion, medium rare skirt steak, in a flohr tortilla, results in the pooling of blood from the resting steak. While that maybe desirable when serving, it isn't with blood pooling and being absorbed by the tortilla. Plus, the cheese inhe bottom is now soaking in resting liquids. This has created a very sour tasting taco that isnt good at all. the meat had to be picked from the taco and the remainder discarded.
