Our filtered clover and wildflower honey is non-pasteurized, and can be used in any situations where a raw honey would be, such as allergies to local pollens. Since we extract in the summer, the honey's standing temperature averages -80 degrees, allowing it to retain all of its enzymes and pollen integrity, as well as it's liquid state rather than becoming crystalized.
