I recently had the pleasure of trying the Quesobirria tacos from Tacon Madre (I usually stick with their ramen) in Independence, MO, and I must say, they were absolutely incredible. I've sampled this dish at various other restaurants in the area, and while they've all been decent, none have come close to the level of flavor and quality I experienced at Tacon Madre.

What Makes Tacon Madre Stand Out:

Exceptional Quesobirria: The star of the show, the Quesobirria itself, was truly outstanding. The meat was incredibly tender and flavorful, and the consomme was rich and savory. The combination of the two was simply divine.
High-Quality Ingredients: It was clear that Tacon Madre uses high-quality ingredients. The flavors were all well-balanced and distinct, without any overpowering spices or artificial tastes.
Authenticity: The Quesobirria at Tacon Madre seemed to have an authentic Mexican flavor profile, which added to the overall dining experience.

the food was very good. Tacos had a nice amount of meat in them with very good flavor.  Large delicious consume. I was satisfied . Although I didn't like the cheese. I'm a cheese lover but I never had this cheese before. It was easy to pick out and still enjoy. The burrito had the same cheese. Only half of it was eaten. I would order the birrias again with no cheese.

Okay, so I just finished the most incredible Birria ramen from Tacon Madre, delivered via Doordash. Let me tell you, this stuff is dangerous. The broth is an explosion of flavor, rich and savory with just the right amount of spice. The meat literally melts in your mouth. And don't even get me started on the cilantro! It's the perfect garnish, adding a burst of freshness that elevates the whole experience to another level.

Seriously, I'm already planning my next order. This might be the best ramen I've ever had. And I've had some ramen.

P.S. The staff at the food truck were incredibly friendly, which always adds to the experience. Highly, HIGHLY recommend!

The Birria Ramen was nice and soupy. Quesabirria had decent flavor. The real stars were the Agua DeHorchata and Agua De Melon. So good. packaged with care, and good portions.

That has to be some of the BEST Quesabirria tacos I have ever had. It had so much flavor! 10/10 would recommend. I wasn't too much a fan of the Strawberry Horchata , it was kind of watery and seemed like a powder. Overall it was still a great experience.
