I was disappointed in the Cheese Calzone because rather than being fully stuffed, there was a lot of empty space inside. That's when I realized it was missing mozzarella! If I hadn't added any extras, it would have been simply dough with a thin layer of ricotta inside. "I am a transplant from the deep south and nothing around here comes close. The catfish is authentic as are the sides, red beans and rice and jambalaya.
