What is a nuruk? Nuruk (누룩) is a traditional fermentation starter that's meant to saccharify the rice. In other words, nuruk contains enzymes that help break down the starches in rice and transform them into fermentable sugars. These sugars are eventually consumed by the yeasts, also present in the nuruk, to create alcohol. Aging with nuruk (natural yeast) a tenderizing effect, making meat & fish more tender and enhancing the taste. It is also rich in lactic acid bacteria, so if consumed over a long period of time, it helps increase the number of lactic acid bacteria in the intestines, helps strengthen immunity, and also provides a fatigue recovery effect.

Easy to digest because it has a high protein content and low fat content, and the taurine and chitosan contained in crab are known to be excellent for improving blood vessel health and digestive organ activity. It is made by soaking fresh crabs in seasoned soy sauce boiled with various ingredients such as onions, garlic, green onions, ginger, peppers and medicinal herb and then letting them mature.
