Adam's Rib Smokehouse originated as a catering service and concessions trailer operating at the Saturday Market and other festivals surrounding the Salem area in 1998. Our meats are slow smoked over …
Everything we got was so fresh and amazing! I love how the Smokehouse Nachos (which were loaded with meat and toppings) and Smoked Tri-Tip had just the right amount of smoke. The Poquito Beans were great. The Coleslaw isn't too saucy which we loved. The Wings were a crowd favorite. And the Full Rack of Ribs- pork and beef were *chefs kiss. The beef ones were a tad dry but it was nothing their incredible bbq sauce couldn't fix!

Beef ribs were lacking flavor/dry. pulled pork was dry. Potato salad was bland and dry. Cornbread was okay. Honey or butter with it would’ve been better. The BBQ sauce was delicious!
The St. Louis ribs were money( so so good) Definitely try them! The beans were the best I’ve ever had! Amazing! You get a lot of food for the price.

I adore Adams! This is where I go when I want to spoil myself a little. The burger is the best in salem in my opinion! They even throw in a lil something extra sometimes. Highly recommend the potato salad also!

All of their meats are absolutely incredible, I would eat here every day if I could! their pulled pork and ribs especially are delicious! their sides are unfortunately a little lack luster, definitely not bad but their mac and cheese and mashed potatoes specifically are not nearly as flavorful as I had hoped for. but other than slightly bland sides this restaurant is INCREDIBLE!

A 16$ BLT should be more than 3 strips of bacon considering I can buy a 1lb of bacon for less than that, very disappointing, coleslaw was a soggy mess, and the bbq sauce was nothing more than a ketchup apple cider vinegar very basic, not worth it
