The Ceviche verde with fluke is fantastic! The dish is so balanced with salt to acid and the freshness of the lime juice, avocado, jalapeño and cilantro. It is one of the best ceviches I've had..ever. The Chicken Soup is delicious as well though Casa Carmen's generosity with the chicken - there was at least 1.5 cups of shredded chicken breast in the quart container - that in the future I will gauge whether I feel like having just the broth which stands beautifully on its own. The Hongos salteados are great - i especially appreciate how herbaceous it tastes with the fresh epazote. There are many other dishes to try but what an auspicious start!
