My wife is gluten and dairy free EXCEPT for their Birria Taco Dinner. Yes, she makes literal dietary exceptions only for them, knowing full well her body will later respond poorly. The rice and beans are actually worth mentioning for their flavor, items that are generally afterthoughts in TexMex. The birria consome is outstanding, the meat tender and flavorful, the taco somehow soft and crisp at the same time. Both the red and green sauces are delicious. I have eaten Waco TexMex for 18 years, and in my view, this is the only truck that rivals La Milpa."
