The outer shell is supposed to crisp/crunchy, with the inner part fluffy. Also, they are not supposed to be covered head to toe in whatever topping is ordered (which is probably why they are not cooked properly).

"Flying Fish is always a hit! I tried the Lobster Roll for the first time THEY were amazing. Most places only give you one without sides, but Flying Fish gives you 2 of the same sized Lobster Roll with 2 sides for much cheaper! And they taste better! My picky 17 y/o loved her Lobster Roll as well.
