After having a good chat about sourdough and pizza base fermentations with one chef, he realised Id been waiting awhile and noticed the mistake. about 7 chefs apologised as we left with our pizzas. Pizzas all were awesome and the bases were some of best I've had: light, crunchy on outside, soft and aerated inside with those gorgeous puffed crusts."
