We use 100% organic malted artisan bread flour with a 0.85% ash content. The high ash content increases the nutritional value of the flour, the addition of malt increases enzymatic activity during fermentation, which breaks down gluten. This makes our sourdough bread gut-friendly & easier to digest than regular bread. We pride ourselves in handcrafting each loaf. All our breads & pastries are vegan.
