Just had dinner at Expedition Eighty8 and I’m already planning my next trip back—no hike required. The vibe? Laid-back but dialed in. The kind of place where you can show up dusty from the trail and still get a meal that feels like a reward.
I ordered the Chicken Corner and the Kolob, and let me tell you—they both delivered in totally different but equally delicious ways.
The Chicken Corner was grilled to perfection—tender, juicy, full of smoky flavor like it just spent the afternoon over a campfire in Canyonlands. Not dry, not bland, just clean, well-seasoned, mouthwatering chicken paired with whatever sauce wizardry they’ve got going on in the kitchen. It was simple, but so intentional.
Now the Kolob? That thing’s a flavor boulder rolling straight into your taste buds. Spicy, bold, just the right amount of heat from the jalapeños, balanced with a creamy sauce that ties it all together. It’s messy. It’s fiery. It’s glorious. Like a canyon descent for your mouth.
Service was quick, staff was friendly, and the space has this cool industrial-meets-adventure-lodge feel—totally fitting for a place named after epic Utah landscapes.

Truly gourmet burgers!phenomenal flavors and juciyness in both doubles.
cooked to med well.......but still solid. the single elk was overcooked and dry. killer cauliflower side. Great truffle fry twist things! tasty mushy small corn side.

I wish I could add pictures but it was inhaled. The truffle mayo, the chicken sandwich, brussel sprouts, THE TRUFFLE FRIES 10/10!!

Kolob burger was completely tasteless. Pretty disappointing when you have to add a ton of salt to a burger with bacon on it. .. just zero flavor.
