One of my go-to dishes to judge the quality of an Italian restaurant is Spaghetti Carbonara because it is a simple dish with complex flavors that is very easy to do poorly but when it is done well is divine. Keeping in mind that this is a delivery; it arrived at the right temperature so the eggs were not curdled. That was impressive. And overall, I was very happy with the Carbonara.
It also came with Italian bread, spices soaked in olive oil, and grated Parmesan. The olive oil and spices were fantastic. The bread was a little dry, bit dipping it in the oil took care of that and overall, the bread/oil/spice/cheese was fantastic.
Now to the flavor of the carbonara because technically it was superb. Which is even more impressive because it was delivered.
I am going to be picky about some details for the chef, but for those potential customers that read this review, get the carbonara. It is very good.
So, for the chef; I am going to criticize at the edges to tell you what would take this dish from a 9 to a 10 for me. Basically, the flavors are just slightly unbalanced. The guanciale is perfect in ratio to the noodles. It has a great salt balance. But, it could use more cracked black pepper and it need the Romano cheese. And my tongue may be deceiving me but it tastes like you used the whole egg instead of just the yolks to coat the noodles. For me, using just the yolks is crucial.
So, take the slight criticism for what little it is worth. As for me, I would eat this carbonara every night. It is that good.

The order was placed at 2:30 pm, so they gave me the lunch portion of Pollo Milanese, which is a small piece of chicken and a 1/2 portion of rigatoni. I have had the dish before and it is twice the size serving. Yet the $27 price was charged. The lunch portion doesn't even show on their website. I requested a partial refund through DoorDash. I hope they honor it.

Pollo Francesce was over cooked and green beans were very under cooked. Cost was high for poor quality
