The food from LSC (Lao Sze Chuan)
is CRAZY GOOD, and this quality is
maintained day after day.
The DongPo Ti Pang (Dong Po Pork
Shank) is a DELICIOUS combination
of lean w/extensive marbling, carrots,
bamboo shoots, spinach and mush-
rooms. The way LSC cooks it does
honor to the man it was named after.
Dong Po was beloved by the Chinese
people (peasants, merchants and
scholars, alike) because he put their
welfare above his own interests.
He took responsibility when wrong.
We could use a man like that today!
Dong Po (Eastern Slope) was the
name of an estate that a friend built
for him after he was exiled to Hang
Zhou for speaking truth to power.
We could use his courage, too.
He took this as his "brush name"
when painting & writing poetry
His birth name was Su Shi.
Is it not right that we hand his name
down to prosperity for his virtue?
This was one of our mom's favorite
dishes to cook.

MARVELOUS, authentic Chinese
food from LSC (Lao Sze Chuan) on
the Post Road.
Chinese unabashedly love pork. In
fact if you say meat, "Rou", without
being specific, it is assumed to be
pork "Zhu Rou". ShaGuo ZhuTi is a (Casserole Style Pig Trotter) slow-
simmered, succulent stew of pork.
This cooking method makes the
lean fall-off-the-bone tender and
unlocks the collagen in rind and
fat cap. The result is a HEAVENLY
concoction. Some of the rind fat
is rendered into the gravy of the
stew, so be sure not to miss out on
having it over white rice to soak up
EVERY DELICIOUS DROP.
Other delectable cuts of pork that
may substitute for ZhuTi are Zhu
Zhou (Pig's Knuckles) or Zhu Xiao
Tui (Pork Shanks) or Ti Pang --
all dishes straight from paradise,
and each has a red-cooked (Hong
Shao) variant.
Lao Sze Chuan can provide so
much pleasure to those who are
not squeamish about eating the
leg cuts of pork OR the belly.

First, we must recognize that LSC
(Lao Sze Chuan) never fails to cook
EXCELLENT food for their custom-
ers, time and time again.
In particular, the Steamed Whole
Striped Bass was a heavenly dining
experience. It starts with selection
-- LSC gave us a beautiful, fresh
fish. A Striped Bass is good eating:
succulent flesh with tiny pockets of
fat along the dorsal area.
The cooking was SUPERB, simple
light soy w/ julienne strips of ginger
and scallions. Neither over- nor
under- cooked.
The Yu Xiang Qie Zi (Eggplant in
Garlic Sauce) is a SiChuan classic.
Yu Xiang (Fish Fragrant) is a euphe-
mism for garlic. Some sugar is added
to mask the generous garlic flavoring.
Gan Bian SiJiDou (Dry Wok String
Beans) is common across China, but
most famous in SiChuan.
Finally, the Singapore MiFen is
adopted from the British Incursion
Era.
Overall, DELICIOUS & AUTHENTIC
food from LSC.

LSC (Lao Szechuan) always provides
TOP NOTCH food, no matter what
you order.
Eel w/ Cellophane Noodles was an
excellent dish -- both the ManYu
and the FenSi are more nutritious
than other fish or mianshi.
Eels are high in zinc, and Mung bean
noodles have more protein and lower
GLI than wheat noodles.
The Brisket Beef Noodle Soup was
SUPERB.
The Baby Squid was outstanding.
I think people who are familiar with
calamari or ika know that squid,
even tender babies, require a lot of
chewing. That is the whole point,
because it's a great food for texture
afficianados.
Overall, LSC is as GOOD AS EVER.

As expected, WONDERFUL food
from LSC (Lao Sze Chuan).
DongPo is the brushname of SuShi,
Statesman/Poet/Painter. He turned
HangZhou from a backwater to a city
fit to be the future capital of Southern
Sung, by dredging Xi lake. He did not
exploit and shun his migrant workers,
but instead threw them a feast. Dong
Po pork is said to have been served &
SuShi confirmed his reputation as a
Great amateur cook whose motto was
"Fish fast, pork slow" laying out the
cooking time for each.
If you order this, LSC will recreate the
Feast of SuShi at Xi lake. This is our
favorite presentation of WuHuaRou
-- a delicacy of Chinese cuisine.
WuHua (5 flowers) stands for 1) skin,
2) fat cap, 3) lean, 4) marbling &
5) more lean.
This is possibly the best tasting pork
in Asian dining.
Also GREAT was the BaiCai ye Suan
Ya (bok choy w/ garlic shoots).
FanQie ChaoDan (tomato & eggs) is
an example of home cooking [almost]
AS GOOD as our mom's.
All in all, TERRIFIC FOOD from LSC.
