This is absolutely delicious! As a southern Californian, and Mexican woman, I was skeptical of Mexican food in Colorado especially this far up in the mountains. I was more than delighted to find that this is a very traditional northern Mexican posole, absolutely delicious!!! although I did call and ask for extra lemon, I only got three thin wedges, and they do serve it with oregano, which is more traditional with Menudo, but I asked for it without and it's delicious. My family got the carne asada street tacos and quesa you ain't that Birria, they absolutely love them and all three salsa that we tried are phenomenal, comparable if not better than what you can find in California!

As a long-time local originally from Texas, I’m pretty picky when it comes to Tex-Mex, and Vaqueros is the closest thing I’ve found in the valley. The steak fajitas are consistently delicious—tender, flavorful, and served with all the classic fixings.
The food is always good, and the DoorDash option makes it incredibly convenient when you don’t feel like going out. If you’re craving authentic Tex-Mex flavors in the Vail area, I highly recommend Vaqueros!

20$ for two tiny tacos, a bit of rice and beans. not a good value. menu items do not clearly explain what is included. would not order again.

They need to use insulated take out containers. Food is delicious but arrived warm at best.
