The broth tastes sweet which is what most typical pho restaurant broth tastes like but overall it's a pretty boring flavor. If I could make it different I would definitely make the broth flavor stronger, possibly with stronger extract from the beef bones for a more meaty flavor or more spices for a more spicy flavor.
