These were the comfort enchiladas I needed. The Enchilada Santa Fe really hit the spot, and they had a bit of a kick...I'd say medium spice but also I'm from the northeast. Spicy enough to be fun. I've been ordering from different Mexican restaurants looking for that classic plate of rice and beans and a little bit of lettuce for crunch, and then the simple but perfect cheese enchiladas barely visible under a sea of red sauce and cheese.
