This is 'cause they boil an entire egg inside the soup, and I suppose the egg white lightens the color. The beef soup was good. Also, they don't enclose a lemon wedge, chopped onion/cilantro with their soups as many other Salvadoran restaurants do. Quality here is a mixed bag."
