If you haven't tracked down this truck yet, you're doing it wrong. The brisket is hands-down some of the best I've had—melt-in-your-mouth tender with a deep smoke ring and rich, peppery bark.
And do NOT skip the sides! The poblano mac and cheese is a complete game-changer—super creamy with just enough roasted poblano kick to cut through the richness. Oh, and the ribs? Absolute perfection. They hit that sweet spot where the meat pulls effortlessly off the bone without turning to mush, packed with incredible smoky flavor.
Great food, fast service, and huge portions. I’ll definitely be back (probably tomorrow).

Absolutely delicious! We have had BBQ from almost everywhere in Dallas area and can say this is honestly one of the best we've ever tried. 10/10. Recommend brisket and potato salad! Mac and cheese amazing

The 1/2 Rack of Ribs were on point! They had that texture and flavor balance I'm always hoping, but rarely achieve, whenever I smoke ribs.
They were on the large side, and had a lot of meat on them.

The portions on the One-Alarm Plateare very generous. I wish they had followed directions on my chopped brisket; I explicitly noted that I wanted lean meat. There's so much fat, it's almost inedible, which sucks, 'cause the flavor is actually good.the macaroni is unremarkable and not the right noodle shape, so lots of shells are stacked and cupped together with no sauce in between. The best part is the corn, and even that seem canned; even switching to frozen would be better. Overall, as delicious as this smells, I'd have to give a 2/5, and thats being generous.
