I absolutly love Eggplant Parmigiana there isn't a way to ruin it as long as the ingredients are grown and used fresh. The portions are large enough to savior over a couple of days. There's sweet in the tomato and not alot of seasoning allowing the natural flavors to have depth.
It's heads up if this is the standard ...less is more friendly to rate visually appealing all can change.
