The bigger issue was the chicken itself. I understand chicken can be dark, but this looked and tasted burnt — not just crispy. It had that bitter, overcooked flavor.
On a positive note, the carnitas were perfect. Flavor, texture, everything was on point. So it’s clear the kitchen can get it right.
