The only thing I'd recommend is making it possible to get the fish not being tossed in wing sauce while also being able to get tartar sauce on the side to dip. Because the only options are to get it tossed in wing sauce or just no sauce at all, no possibility to get tartar sauce on the side to dip- to keep the fish flaky and crispy without tossed sauce making it soggy and still having a sauce option on the side.
